Hiya everyone! I contemplated doing this post for a multitude of reasons but I decided to do it because I have been looking forward to posting THIS style of posts since around September.
10:00am: Biscoff Spread on Toast
I always tell myself to eat breakfast on the morning because it’s the most important meal of the day. You do a lot of stuff on Christmas so ya need the energy. I just had something simple for breakfast because toast is quick and easy to make!
1:00pm: Cheese and Crackers
I needed something around this time. We had visited my nans and gone to my brother’s house (with four children) so I had worked up an appetite. My dad didn’t put the turkey for him and my brother until we got home around 12pm so the dinner was a long way away and this would just tide me over until then!
4:30pm: Christmas Dinner
This is so exciting for me!! I’ll give you a quick run down of what’s on my plate this Christmas – Linda McCartney Beef Roast with Shallot and Red Wine glaze, pigs in blankets, rosemary roasters, Brussel sprouts, broccoli, cauliflower, roasted parsnips, carrots, long beans and peas! A LOT. I loved this so much. Obviously I had the gravy and the mint sauce because you can’t go without on a roast!
7:00pm: Snacks
Obviously after having that monster of a dinner, I wasn’t too peckish the whole evening. I had a couple chocolates here and there because I got bought some and you can’t not eat them hahaha.
I’m aware this probably isn’t enough in comparison to what some people eat. BUT it’s enough for me and that’s okay. I have a small appetite normally and I am in semi-recovered from an eating disorder so this is A LOT for me.
I pushed the boat out this year and I’m so happy this is my second Christmas as a vegan and I’ve loved every second of it. I’m doing a post soon about what I’ve had for Christmas and it’ll probably come out before the New Year, but I am so so busy so I’m unsure (I haven’t even wrote it yet lol). I hope everyone has a brilliant end of the year!

oh my god that christmas dinner looks super delicious! I’m similar to you; my appetite is quite small so my christmas “stuff myself silly” looks pretty weak compared to others x_x xx

Omg! Everything looks so good but I’m so ashamed because Romania traditional food it’s not healthy at all and now I’m feeling so full of bad stuff but good in the same time hahaha!

First of all this roast looks beautiful, second of all what vegan cheese to you buy?! I’m vegetarian and would love to go vegan however the cheese is what stops me 😦 My mum is vegan and any cheese she has bought for herself I have not liked. Thank u and great post!!

Thank you!! It really is! It tastes delightful, the rest of my family love it so that says something. I buy them from Tesco! I’ve struggled to find nice vegan cheese too, I’m not a cheese fan anyway but Tesco have a lovely selection!
