Hiya!! I was sitting scheduling my final Blogmas posts yesterday and it dawned upon me, how little amounts of baking posts I’ve done this year. Sure, I’ve done plenty of cooking main meals and what have you, but not a lot of baking yummy treats for the Christmas season. So, today (which is the 11th for me) I’ve took it upon myself to bake three super simple and quick recipes and compile them into a blog post for you guys! So grab a cup of coffee and sit down because I can imagine this being a long one.
1. Brownies
Obviously not my photo here but I didn’t take any as I was too caught up on finishing them off to make another treat! The recipe is super simple and effective!
RECIPE:
– 2 cups of plain flour
– 3/4 cups of cocoa powder
– 2 cups of sugar (I used white sugar for this recipe but I have tested it before with brown!)
– 1 and a half cups of almond milk
– a pinch of salt
All you do is put the dry ingredients into a bowl and then add the wet ones. Pop them in a preheated (gas mark 6) oven for 15 minutes and then they are done!
2. Spiced Sugar Cookies with Agave Icing
– 1 1/4 cup of flour
– 1/2 teaspoon baking soda
–Β 1/2 teaspoon baking soda
– 1/2 teaspoon nutmeg
– 1/2 teaspoon cinnamon
– 1/2 teaspoon allspice
– 1/2 cup of vegan butter
– 1/2 teaspoon vanilla extract
– 4 tablespoons water
– 1 cup powdered or icing sugar
– 1/4 cup vegan butter
– 1/4 cup non-dairy milk
– 1/4 cup agave syrup
– 1/2 teaspoon cinnamon
Preheat to gas mark 6. Combine all dry ingredients and then add the wet ingredients until combined. Roll the dough out with a rolling pin until it’s around half an inch thick. Cut out the shapes and then bake for 10-12 minutes. Let them cool and then ice them.
Also, before I move onto the next recipe, can we appreciate the cookie K-9????!! I love him so much and I ate him with pride.
3. Sugared Walnut Fudge
~ sorry i don’t have a picture here! it set at nighttime so i was waiting until the morning to take pictures but when I got up, it was all gone!!~
RECIPE:
– 6 tablespoons vegan butter
– 3 1/2 cups of icing sugar
– 1/2 cup of cocoa
– 1/4 cup of almond milk
– handful of sugared walnuts
Lightly grease a loaf pan using some of the vegan butter. Then with the remaining butter, place it along with the sugar, cocoa, vanilla and soy milk in a bain marie until the mixture is completely melted and smooth. I added the walnuts in now so they didn’t burn along with the mixture! Once you’ve popped the mixture into the greased loaf tin, you wanna place it in the fridge for around two hours – it can take longer obviously depending on your fridge! After however many hours and the fudge is firm to touch, slice into bite-sized bites and it’s done.

They are so easy! I am not great at baking either, I’m super clumsy and sometimes my hands work too fast for my brain haha, but I could manage them!

Did I see sugar walnut fudge and spice cookies with agave?! YUM! I really need to get back into baking. Iβm loving the cute brownies with the cookie cutters. I bet it smells good at your place.

Hahahah thank you! I’m always baking so I guess it always smells an array of spices and chocolate! I’m planning on making mince pies later so my house is going to smell so festive!
